The Hotel Chais Monnet has been artfully created from the historic Monnet cognac cellars that date from 1838 and blended with the ultra-modern . Today , on this site , in the centre of the town of Cognac , just a few minutes ’ walk from the castle , the church , the gardens , historic buildings , and the museums , is the Hotel Chais Monnet , a 5-star hotel with 92 bedrooms , junior suites and suites . The original exterior of the wine cellars ’ building is in the pale , white-blond stone and behind is the chateau-style estate house . Situated at the very heart of the Smith Haut Lafitte vineyard is this charming hotel , owned by the same family as the vineyard .
