Having opened in June 2009 , Castel Monastero occupies what was an ancient hamlet with a monastery dating from the 11th Century called Monastero dell ’ Ombrone . It can be found to the east of Siena and south of the town of Castelnuovo Berardenga amid the vines , cornfields , chestnut forests and rows of cypress trees of the Ombrone valley . The restoration of the village has transformed the main square into the heart of the resort where you can dine and enjoy a drink and the buildings now house the 74 rooms and suites . Immediately around the resort are lawns and vineyards as well as striking views of the countryside . Three outdoor pools have been set a little way off from the heart of the resort whilst the spa is situated over two floors in a building in the village . It offers a wide range of treatments for relaxation as well as weight loss and detoxifying guided by Dr Mosaraf Ali , a leading expert in integrated medicine .
